Taco Tuesday with a Twist

It's Tuesday and in this house it's usually TACO TUESDAY, but tonight I decided to try out some homemade Tex-Mex food for these Italian boys. Doesn't get much better than traditional cheese enchiladas with chili gravy. The recipe calls for onions, however I did not include them this time. The enchiladas were paired with some hominy (seasoned with a little bit of dried oregano) and refried beans. The meal was a home run for the boys and one I will DEFINITELY make it again!!

Baked Coconut Shrimp w/ Spinach & Feta Couscous

Over the weekend we purchased some spinach & feta couscous from Central Market (hands down the BEST there is). I was trying to think of some type of meat to serve with it. Last time we had salmon which was a perfect compliment. However, we had salmon over the weekend. So back to the drawing board. After a little research, I came up with coconut shrimp. In staying on our healthy eating kick, I knew I wanted it to be baked and so this recipe showed up in my search results. Overall this meal was a success. Very light and the summer salad had balsamic vinaigrette, raisins, field greens and shredded Drunken Goat cheese. Fantastic for a light summer meal to go with a nice glass of either white or red wine.

Beefy Cheesy Pasta Bake

This is a perfect and very simple dish when you've got a hungry family. Boys especially will appreciate the savory mix of beef and cheese. All the essential elements of a balanced meal in one dish. Pairs nicely with a garden salad.

Penne Alfredo with Italian Sausage




For this meal, I put a sweet Italian twist on a traditional favorite. Who doesn't love a creamy Alfredo sauce, but believe me this can not be found in a jar. All made from scratch with Italian sausage to top it off. Makes plenty for your next Italian feast. Pair with a glass of red wine and you've got a filling and savory meal.
